Food Safety at The Ritz
The Ritz runs with a 67-strong brigade. In any one service there can be over 500 covers with numerous allergies to contend with and preferences to navigate – including strawberry, prawn and nut allergies, dairy, vegan and gluten-free diets.
“The biggest challenge is to maintain standards and it has to be worked at constantly to make sure they are achieving it. My job is to orchestrate that and to make sure they have the skills, the right equipment and the motivation. In any good kitchen, it’s all about motivation and what makes you get up in the morning and want to cook great food and work hard to get a dish perfect."
